Brekkie Bowls

Hi friends! Remember me? I've been slack I know, but I've been creating (and eating) fun stuff for you and for that, you cannot hate. This post might not be anything crazy new in the cooking / breakfast world - but instead, is a little inspiration from some of my fave combos. I've been having too much fun, some might say, designing brekky bowls in the morning. Whether they be overnight oats, porridge, weetbix, cereal mixes etc - they have been making mornings that teensy wit better. Considering I am the furthest thing from a morning person imaginable - seriously, steer clear - this is saying something. So, without further ado and incessant rambling, I'm going to share a few of the combos I have been enjoying and posting on instagram.

Holla if you are a Weetbix Kid!

Ingredients

  • 4 Gluten Free (or normal, show offs) Weetbix
  • Pauls Lactose Free Milk approx 200ml (or milk of choice, obvz)
  • Small Banana
  • Handful Strawberries
  • Cottage Cheese (I use Bulla, approx 60g)
  • Sunflower Seeds 4/5g (I use activated)
  • Sprinkle of Ground Cinnamon for taste

Literally the easiest and yummiest bowl of weety (but not so gluten-y) fun. Crumble weetbix into a bowl and soak in milk. Heat it up in the microwave for 1-2 minutes while cutting up strawberries and banana slices. Take out and top with fruit, scoop of cottage cheese, sprinkle of seeds and a dash of cinnamon. #yourewelcome

Vanilla Porridge with a Chocolate Punch ;)

Have you guys heard of Wonderfully Raw Coco Roons?! If you have, welcome to the club, if you have not, get some, like now. These are ridiculously amazing, raw, gluten free, paleo etc etc. Pretty much you need them in your life, because A) they are good for you, B) they are so yummy, and C) they have a brownie flavour.

Ingredients

  • 60g Porridge Flakes (I use Big Oz Rice and Millet Porridge Flakes)
  • 170ml Almond Vanilla Milk (I use Unsweetened Almond Breeze)
  • 80ml Water
  • Goji Berries
  • Sunflower Seeds
  • Pecans
  • Stawberries
  • 1 small/medium Banana
  • 1 Brownie Coco roon
  • Organic Chocolate Spread (I use Niubella)

Pour porridge flakes, milk and water into a large bowl. Microwave for up to 3 minutes, stopping to stir as needed. Take out and cover in chopped nuts, coco roon and remaining toppings. Melt chosen chocolate spread in the microwave before drizzling over the porridge and voila! So much chocolatey fun!

I also did a similar mix as above, with a few minor changes and a whole different taste. This time, I swapped the seeds for a handful of Kez's Gluten Free and Low Fructose Cereal (honestly the best, get to Woolworths stat!), used 250 ml of water in place of milk, and replaced the Chocolate Spread with a drizzle (and a few spoonfuls straight from the jar because who can resist) of Mayver's Peanut Butter.

I'll be sharing some more combinations as I go, and also a post is coming with a few of my go-to favourite items. I've had a few questions regarding what are some of my staples/brands that I use with milk, cereal, cheese etc - so I thought I'd share a few of these. In the meantime, go make yourself one of these babies. It's breakfast time somewhere in the world... :)
